Ramen is a popular Japanese noodle soup that comes in many variations. It typically consists of a flavorful broth, noodles, and a variety of toppings. Here’s a basic recipe for a classic ramen that you can customize to your taste:

Classic Ramen

Ingredients:

  • For the Broth:

    • 4 cups (950 ml) chicken or vegetable broth
    • 2 cups (475 ml) water
    • 2-3 tablespoons soy sauce (adjust to taste)
    • 1 tablespoon miso paste (white or red)
    • 1 tablespoon sesame oil
    • 1 teaspoon grated ginger
    • 2 cloves garlic, minced
    • 1-2 tablespoons mirin (Japanese sweet rice wine)
    • 1 tablespoon rice vinegar (optional, for added tang)
    • 1-2 teaspoons sugar (optional, for sweetness)
  • For the Ramen:

    • 2-3 packs of fresh or dried ramen noodles
    • 1 cup sliced mushrooms (shiitake, cremini, or your choice)
    • 1 cup baby spinach or bok choy
    • 1/2 cup corn kernels (fresh or frozen)
    • 1-2 green onions, sliced
    • 2-4 soft-boiled eggs (recipe below)
    • 1/2 cup sliced cooked chicken, pork, or tofu (optional)
    • Nori (seaweed) sheets, cut into strips (optional)
    • Bean sprouts (optional)
    • Sesame seeds (for garnish)
    • Sriracha or chili oil (optional, for heat)
  • For Soft-Boiled Eggs:

    • 4 large eggs
    • Water (for boiling)

Instructions:

  1. Prepare the Soft-Boiled Eggs:

    • Bring a small pot of water to a boil.
    • Gently add the eggs and boil for 6-7 minutes for a slightly runny yolk.
    • Transfer the eggs to an ice bath to cool for a few minutes, then peel and set aside.
  2. Make the Broth:

    • In a large pot, heat the sesame oil over medium heat.
    • Add the grated ginger and minced garlic, and sauté for about 1 minute until fragrant.
    • Add the chicken or vegetable broth, water, soy sauce, miso paste, and mirin. Stir until the miso paste is fully dissolved.
    • Bring the broth to a simmer and cook for about 10-15 minutes to let the flavors meld. Adjust seasoning with additional soy sauce or sugar if needed.
  3. Cook the Noodles:

    • While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
  4. Assemble the Ramen:

    • Divide the cooked noodles among serving bowls.
    • Ladle the hot broth over the noodles.
    • Top with sliced mushrooms, baby spinach or bok choy, corn, sliced green onions, and any additional protein (chicken, pork, or tofu) if using.
    • Halve the soft-boiled eggs and place them on top of the ramen.
    • Garnish with nori strips, bean sprouts, sesame seeds, and a drizzle of sriracha or chili oil if desired.
  5. Serve:

    • Serve the ramen hot, and enjoy!
